Caesar Salad with Prosciutto
Classic Caesar salad gets a meaty upgrade with the non-traditional addition of prosciutto. Don't worry though — all the star players are still in this salad recipe.
FOR THE DRESSING, MASH:
FOR THE SALAD, COMBINE:
For the dressing, mash garlic with ¼ tsp. salt using the side of a knife; transfer to a bowl.
Add ¼ cup Parmesan, lemon juice, mayonnaise, anchovy paste, Dijon, Worcestershire, and Tabasco; whisk to blend, then whisk in oil until emulsified. Season dressing with salt and pepper.
For the salad, combine romaine, baby romaine, and prosciutto. Toss salad with dressing and ½ cup Parmesan; top with croutons.
