Cook rice according to package directions; set aside.

Sauté bacon in a large saucepan over medium heat. Pour off all but 1 Tbsp. of drippings and return pan to the burner.

Add onion, poblano, and garlic; sauté 3 minutes. Stir in beans to heat through, then add the tomatoes and seasonings.

Serve beans over cooked rice.
