Bean Sprout Salad with chow mein noodles
Bean sprouts and chow mein noodles are both common in chop suey, and, combined into a salad with a flavorful sesame-soy vinaigrette, make an excellent, crunchy Asian side dish.
FOR THE VINAIGRETTE, WHISK:
FOR THE SALAD, COMBINE:
For the vinaigrette, whisk together vinegar, soy sauce, oil, sugar, and chili garlic sauce.
For the salad, combine bean sprouts, bell pepper, scallions, and cilantro; toss with vinaigrette and chow mein noodles just before serving.
Sprouts are susceptible to spoilage, so keep them chilled and rinse them thoroughly before using.
