Baked Acorn Squash with Brown Sugar & Mustard

Leave plenty of room for these simple roasted acorn squash half-moons. They’re slightly sweet from maple syrup and brown sugar with a mustardy kick, and are incredibly easy to make. This sweet and savory squash is the perfect simple side dish for Thanksgiving Day.

Preheat oven to 400°. Line a baking sheet with parchment paper.

Microwave squash 5 minutes on a paper-towel-lined plate; when cool enough to handle, halve lengthwise, then scoop out and discard seeds. Cut squash crosswise into 1-inchthick slices. Arrange squash slices on prepared baking sheet; season with salt and pepper.

Combine brown sugar, Dijon, coarse-ground mustard, and butter; spoon over squash slices. Bake squash until fork-tender, about 20 minutes.
