Combine 2 bags shredded quesadilla cheese (7 oz. each) and ⅓ cup minced jalapeños.

Sprinkle half the cheese mixture on 6 street taco-sized flour tortillas. Thinly slice 1 avocado and divide among cheese-topped tortillas. Sprinkle remaining cheese mixture over avocado, season each with kosher salt, then top with 6 more tortillas.

Heat a griddle over medium and brush with oil.

Cook quesadillas on griddle until golden on both sides, 45 minutes total; let rest 1 minute before cutting into quarters.
