Flavored with garlic and almonds, this Asparagus Amandine is just like the green bean dish with the same name, but with tender spears of asparagus instead.
To prep this dish ahead, blanch the asparagus, then shock it in cold water. Refrigerate it until you’re ready to sauté and serve.
Blanch asparagus in a large pot of boiling salted water until al dente, about 2 minutes. Drain asparagus and immediately plunge into a bowl of ice water to stop the cooking, then drain again.
