If you really want beef to sing, add a simple homemade steak sauce to the menu. It’s easy to make, keeps for weeks in the refrigerator, and tastes better than bottled versions.

Make the sauce up to two days ahead and chill it, but bring it to room temperature before serving.


Sweat onion and garlic in oil in a saucepan over medium-low heat until softened, 5 minutes.

Stir in tomato paste and anchovy paste; cook 2 minutes. Stir in water, Worcestershire, vinegar, brown sugar, lemon juice, soy sauce, mustard, and chipotle and bring to a boil. Reduce heat to medium-low and simmer until reduced to 1 cup, 20 minutes. Season sauce with salt and pepper; let cool, then strain.
