Inspired by spinach-artichoke dip, this Spinach-Cheese Dip was created specifically to dip in tender artichoke hearts. But don't stop there — this would make a great dip for French fries, chips, or whatever could use a cheesy sauce.

Melt butter in a saucepan over medium-high heat. Add onion; cook until softened, 23 minutes. Whisk in flour; cook 1 minute. Whisk in milk; bring to a boil over medium heat and cook until thickened and smooth, 23 minutes. Stir in Parmesan and Swiss cheeses until melted. Stir in spinach, lemon juice, and Dijon mustard; season with salt, freshly grated nutmeg, and Tabasco sauce to taste.
