Salsa Verde

“Salsa verde” is Spanish for green sauce. This version is heavy on the jalapeños and jazzes up a rice dish, or just about anything. It keeps for several days in the fridge, but expect the color to fade. If you like things on the spicy side, leave the seeds in the jalapeños.

Purée jalapeños, cilantro, onion, lime juice, oil, and salt in a blender or mini food processor. Transfer salsa to a bowl; chill until ready to serve.
