Roasted Tomato Sauce
Roasting tomatoes in a hot oven can make even the saddest winter tomatoes taste intense and delicious. This pasta sauce recipe is easy (only 6 ingredients!) and relatively hands-off, with the oven doing most of the work. Use as a multi-purpose pasta sauce in your favorite recipes.

This sauce can be made up to 3 days ahead and refrigerated.
Preheat oven to 450°.
Toss tomatoes, onion, and garlic with oil; season with salt and pepper flakes. Transfer mixture to a baking dish; roast until tomatoes blister, 35–40 minutes.
Purée mixture in a food processor or with a handheld blender.
