Cook onion in oil in a large saucepan over medium heat until softened, about 3 minutes.

Add garlic, Italian herbs, and pepper flakes; cook 1 minute. Stir in tomatoes and simmer 10 minutes. Off heat, stir in vinegar and season with salt and pepper.
