Wild Rice & Vegetable Soup

Wild Rice & Vegetable Soup is easy to make, and as its name implies, it’s loaded with colorful, nourishing vegetables along with wild rice. This soup is chock full of veggies, and is versatile. You can swap out a vegetable for a different one like zucchini or kale, or change the potato, too. The wild rice offers nutty flavor with a firm yet chewy texture. (You can use a wild rice blend, too.)

Cook wild rice according to package directions; drain any excess liquid.

Heat oil in a pot over medium. Add onions, carrots, celery, and bell pepper; sweat vegetables until softened, 5 minutes, stirring often. Add garlic, Italian seasoning, and pepper flakes; cook until fragrant, 1 minute.

Stir in broth, potatoes, tomatoes, and bay leaf; bring to a boil, then reduce heat to a simmer, and simmer soup, partially covered, until potatoes are fork-tender, 15 minutes.

Add green beans; simmer until softened, 5 minutes more.

Stir in lemon juice; season soup with salt and black pepper. Top servings with Parmesan.
