Vietnamese Chicken Salad

Looking to streamline your weeknight cooking without sacrificing flavor? Grab a rotisserie chicken! With inspiration taken from the classic Vietnamese sandwich, the bánh mì, this simple chicken salad comes together quickly, and tastes a bit exotic.

Since Vietnam was formerly a French colony, its cuisine exhibits many French influences. So it’s only natural to pair this Vietnameseinspired chicken salad with some type of French bread — either a croissant or a baguette works perfectly here. If using a baguette, halve it lengthwise, quarter it crosswise, then tear out some of the soft bread in the center to make room for the flavorful chicken salad.

Whisk together mayonnaise, shallots, chili garlic sauce, sugar, ginger, fish sauce, zest, and lime juice; season with salt.

Spread 1 Tbsp. mayonnaise mixture onto cut sides of each croissant.

Combine chicken, mint, carrot, and remaining mayonnaise mixture; serve on croissants with romaine.
