Velvet Mac 'n Cheese

Not many dishes top macaroni and cheese when it comes to comfort food. That said, most people probably have their favorite recipe. This quick and creamy stovetop version might just become your new go-to. And since it's all made on top of the stove, not baked, you get immediate gratification.

Cook macaroni in a pot of boiling salted water according to package directions; drain.

Melt butter in a saucepan over medium-high heat.

Whisk in flour, cook 1 minute, then whisk in wine and cook until evaporated. Whisk in milk, Dijon, onion powder, and garlic powder; bring to a simmer.

Add Mexican cheese and cream cheese, whisking until cheeses melt. Stir in macaroni; season with Tabasco, salt, and pepper. Stir chives into mac ‘n cheese just before serving.
