Tzatziki Chicken Salad

Taking inspiration from a classic Greek sauce, this chicken salad is unique and full of flavor. Packed with veggies — cucumber, tomatoes, lettuce — and chopped chicken, this salad is not only satisfying but pretty darn good for you, too. Also known as hothouse cucumbers, English cucumbers are skinnier than regular cucumbers and are virtually seedless.

Instructions

Drain cucumbers in a fine-mesh sieve to remove excess moisture; transfer to a bowl. Stir in yogurt, feta, dill, and lemon juice.

Stir in chicken, romaine, tomatoes, pepperoncini, olives, and onion; season with salt and pepper.

Press out as much liquid from the shredded cucumbers as you can to ensure the salad isn’t too loose.

Love this recipe. Made it a few times with the Savory Naan recipe (link shown above) and it's the perfect summer dinner. I usually reduce the amount of greek yogurt - doesn't quite need 1 1/2 cups to get the job done.
