OFF HEAT, STIR IN:
Use both the green and white parts of the scallions in this dish. The white part adds onion flavor, while garnishing with the raw green portion provides a fresh crunch.
Cook bacon in a sauté pan until crisp. Transfer bacon to a paper-towel-lined plate. Drain all but 2 Tbsp. drippings from pan.
Sauté mushrooms and scallion whites in drippings over high heat until mushrooms brown, about 5 minutes. Stir in turkey, flour, and tomato paste; cook 1 minute.
Deglaze pan with broth, scraping up any brown bits. Reduce heat to medium-high; simmer sauce until thick, 1 minute.
Off heat, stir in sour cream and bacon, then season with salt and pepper.
Serve stroganoff with noodles; top with scallion greens and additional sour cream.
Flour thickens the sauce. Be sure to cook at least 1 minute after adding to eliminate any starchy taste.
To prevent the sour cream from curdling, be sure to add it to the stroganoff off the heat.
