Turkey Stroganoff

With a creamy sauce, savory bacon, and leftover turkey, this fast recipe for Turkey Stroganoff is sure to be your new favorite. The mushrooms, onions, and sour cream that are standard in stroganoff are accounted for, as well as a delicious, creamy sauce. Complete the stroganoff by serving it over egg noodles.

Use both the green and white parts of the scallions in this dish. The white part adds onion flavor, while garnishing with the raw green portion provides a fresh crunch.

Instructions

Cook bacon in a sauté pan until crisp. Transfer bacon to a paper-towel-lined plate. Drain all but 2 Tbsp. drippings from pan.

Sauté mushrooms and scallion whites in drippings over high heat until mushrooms brown, about 5 minutes. Stir in turkey, flour, and tomato paste; cook 1 minute.

Deglaze pan with broth, scraping up any brown bits. Reduce heat to medium-high; simmer sauce until thick, 1 minute.

Off heat, stir in sour cream and bacon, then season with salt and pepper.

Serve stroganoff with noodles; top with scallion greens and additional sour cream.
