Turkey Pie with Hash Browns

Brimming with flavor, this take on a British pub favorite is satisfyingly delicious. Requiring only 30 minutes of preparation, it makes an easy weeknight meal. Bubbling, warm, and filling, casseroles are an ideal dinner to take the chill off brisk evenings. The fact that they’re full of common pantry items, can be quickly assembled, and just popped in the oven makes them a sight for sore eyes on busy nights of the week.

Lighten up traditional British pub fare like shepherd’s pie by swapping ground turkey for the classic lamb. Instead of the more timeconsuming mashed potatoes, make a crisp and tasty topping from frozen hash browns topped with melted butter and shredded Cheddar.

To crisp the potatoes and so the cheese on top doesn’t burn while the casserole filling bakes, wait to add it until after the casserole bakes 30 minutes. As the cheese melts, the hash browns finish cooking. Hot, hearty, and focused on comfort, this is one practical pie.

For a leaner option without sacrificing flavor, use ground turkey breast. For the tastiest pie, choose ground turkey labeled 93% lean.

Instructions

Preheat oven to 400°. Coat a 2-qt. baking dish with nonstick spray.

For the filling, brown turkey in 2 Tbsp. oil in a sauté pan over medium-high heat, 810 minutes. Transfer turkey to a paper-towel-lined plate; discard any liquid.

Heat remaining 2 Tbsp. oil in same pan over medium. Add onion, carrot, and celery; sweat, about 5 minutes. Add garlic and thyme and cook until fragrant, 1 minute.

Stir in flour and tomato paste; cook 1 minute.

Whisk in tomatoes, broth, wine, Worcestershire, and Dijon; bring to a boil. Reduce heat to mediumlow and stir in turkey and peas; season with salt and pepper. Transfer filling to prepared baking dish and place on a baking sheet.

For the topping, arrange hash browns on top of filling, then drizzle butter over the pie.

Bake pie 30 minutes. Sprinkle top with Cheddar and bake until hash browns are cooked through, about 20 minutes more. Let pie cool 1015 minutes before serving.
