Instructions

Whisk together oil, vinegar, Dijon, honey, shallots, garlic, and anchovies for the vinaigrette; season with salt and pepper.

Cook lentils according to package directions; drain, transfer to a bowl, toss with 2 Tbsp. vinaigrette, and season with salt and pepper.

Meanwhile, cook potatoes in a pot of boiling salted water until fork-tender, 12 minutes; transfer to a bowl and toss with 2 Tbsp. vinaigrette. Add green beans to same pot of water and cook until crisp-tender, 34 minutes; drain, transfer to a bowl, and let cool.

Preheat grill to medium. Brush grill grate with oil.

Marinate tuna in ¼ cup vinaigrette 10 minutes, then grill, covered, 23 minutes. Flip tuna, brush with marinade, and cook to medium-rare, 23 minutes more; transfer to a cutting board and slice.

Divide lentils, potatoes, green beans, tuna, spinach, tomatoes, olives, and eggs between two bowls; drizzle with remaining ½ cup vinaigrette.
