Tomato Braised Chicken
Not much is better tasting than chicken thighs swimming in a briny tomato sauce. The only thing superior is the addition of cheese tortellini.
Combine tomatoes, onions, garlic, olives, Italian seasoning, pepper, fennel seeds, salt, and bay leaf in a 4- to 6-qt. slow cooker.
Nestle chicken into tomato mixture. Cover slow cooker and cook chicken until fork-tender and cooked through on high setting, 3 hours, or low setting, 6 hours.
Remove chicken from slow cooker and keep warm; discard bay leaf. Transfer tomato mixture to a large pot; bring to a boil.
Serve chicken with sauce; top servings with parsley and Parmesan.
Tuck the chicken thighs into the tomato sauce to allow the thighs to absorb flavor and stay moist.
Since the tortellini cook quickly, boil them in the tomato sauce in a pot, not in the slow cooker.
