Not much is better tasting than chicken thighs swimming in a briny tomato sauce. The only thing superior is the addition of cheese tortellini.

Instructions

Combine tomatoes, onions, garlic, olives, Italian seasoning, pepper, fennel seeds, salt, and bay leaf in a 4- to 6-qt. slow cooker.

Nestle chicken into tomato mixture. Cover slow cooker and cook chicken until fork-tender and cooked through on high setting, 3 hours, or low setting, 6 hours.

Remove chicken from slow cooker and keep warm; discard bay leaf. Transfer tomato mixture to a large pot; bring to a boil.

Stir in tomato paste and tortellini; boil until tortellini is al dente, 79 minutes.

Serve chicken with sauce; top servings with parsley and Parmesan.
