Tofu Reuben Sandwiches

Here’s a classic reuben sandwich makeover that everyone can get on board with. Crispy tofu and all the usual suspects are here, making this revised deli favorite an unforgettable vegetarian lunch or dinner.

To make your own dressing, whisk together 1/2 cup mayonnaise, 1/4 cup ketchup, 2 Tbsp. sweet pickle relish, and 1 Tbsp. fresh lemon juice.


Sauté tofu, in batches, in a nonstick skillet over high heat until golden on both sides.

Spread butter on 1 side of each bread slice.

Arrange bread slices, buttered sides down, on a cutting board; spread each with 1 Tbsp. dressing, then layer 1 slice cheese, 2 pieces tofu, 1/4 cup sauerkraut, and 1 more slice of cheese on half the slices. Place remaining bread slices on top of sandwiches, buttered sides up.

Cook sandwiches in same skillet, in 2 batches, over medium heat until bread is browned on both sides and cheese is melted; let rest 2 minutes, then cut in half.
