Instructions

For the pico, combine tomatoes, onion, jalapeño, cilantro, lime juice, salt, and pepper.

For the bowl, heat rice in the microwave according to package directions.

Heat a skillet over high. Add frozen steak and cook 2 minutes. Add pepper and onion blend; cook until warmed through, 5 minutes. Add fajita seasoning and mix well.

Heat beans in the microwave in a microwave-safe bowl on high for 2 minutes.

Assemble bowls layering rice, steak mixture, and beans in four bowls. Top bowls with Cheddar, avocado, pico de gallo, and a squeeze of lime juice.
