This super-fast technique makes it easy to know when the steak is done. And don’t skip the nonstick spray; it’s critical to recipe success.

Instructions

Mince scallions, ginger, jalapeño, garlic, sugar, zest, lime juice, and sriracha in a food processor. Add olive and sesame oils; purée.

Place steak in a baking dish or resealable plastic bag. Add marinade and turn steak to coat; marinate at least 2 hours in the refrigerator, or overnight. Remove steak from marinade, let excess drip off.

Preheat grill to medium-high. Brush grill grate with oil.

Slice steak against the grain at a sharp angle into thin strips, shingle into (4 strip) portions, then coat with nonstick spray. Flip steak strips onto grill.

Grill steak strips, uncovered, until strips brown on the edges, 23 minutes; flip and cook 12 minutes more.

Thin strips of flank steak grill quickly and easily over direct heat. Shingle about four strips on a chef’s knife or offset spatula, barely overlapping the slices, then flip onto grates.
