Spicy Beef & Vegetables with Udon Noodles
Stir-fries are, by their very nature, quick to prepare, making them ideal for weeknights. And this one utilizes frozen vegetables and cooked udon noodles, meaning half the work is already done for you, so it’s even quicker. But more important than it being fast, this stir-fry is loaded with flavor everyone is sure to love.

If you can’t find refrigerated udon noodles, use dried and cook them according to package directions.
Combine broth, soy sauce, brown sugar, garlic, ginger, sambal, and cornstarch for the sauce.
Heat oil in a wok or large skillet over medium-high. Add steak and stir-fry until browned on both sides, 2–3 minutes; transfer to a plate.
Add vegetables to wok and stir-fry until softened, 3–5 minutes. Stir in sauce; bring to a boil and cook until thickened. Add noodles and cook until heated through, 2–3 minutes, then stir in steak.
For bite-sized pieces of steak, halve the steak lengthwise, then thinly slice crosswise.
