Slow-Cooked BBQ Beef with green apple slaw
Sweet and spicy, this tender slow-cooked barbecue beef topped with green apple slaw is full of apple flavor that will surely please your guests.
FOR THE BEEF, BROWN:

For the beef, brown beef in oil, in two batches, in a skillet over medium-high heat, 15 minutes; transfer to a 6- to 8-qt. slow cooker.
Deglaze skillet with ale, scraping up any brown bits. Add broth and reduce by half, 10 minutes. Stir in ketchup, mustard, and Worcestershire; add mixture to slow cooker, then add pickling spice sachet. Cover slow cooker and cook beef until fork-tender on high setting, about 5 hours.
Remove beef from slow cooker and shred using two forks. Transfer braising liquid to a saucepan (discard sachet) and cook over medium-high heat until reduced by half, about 20 minutes; stir in vinegar. Add beef to sauce to heat through, 5 minutes.
For the slaw, whisk together vinegar, oil, Dijon, shallots, honey, and cayenne for the vinaigrette. Combine coleslaw mix, apples,and onions in a bowl and toss with vinaigrette; season with salt and black pepper. Stir in parsley just before serving.
Deglazing the skillet with apple ale adds apple flavor and helps dissolve the flavorful bits in the pan.
Tying the pickling spices in a sachet makes them easy to remove and discard later.
