Shrimp and Okra Gumbo

While fresh okra is best, frozen sliced okra can be used in a pinch.

Garnish: chopped green onion

Instructions

Melt butter in a large Dutch oven over medium-high heat. Add yellow onion, bell pepper, and celery; cook, stirring frequently, for 3 minutes. Add garlic; cook, stirring constantly, for 1 minute. Add flour; cook, stirring and scraping bottom of pot constantly, until mixture is the color of peanut butter, 10 to 12 minutes. Add 2 cups stock, bay leaves, Worcestershire, salt, and black pepper to onion mixture; bring to a boil. Reduce heat to medium-low; simmer for 5 minutes. Add okra; cook for 3 minutes. Add shrimp to pot, ensuring they are submerged in the mixture. Cover and cook until heated through, about 10 minutes. Discard bay leaves.

Serve with hot cooked rice. Garnish with green onion, if desired
