Shrimp & Chickpea Salad
This Mediterranean-flavored Shrimp & Chickpea Salad is another one destined for your faves list. Trust us. It also comes together in a flash.
Toss chickpeas with paprika, garlic powder, salt, and ½ tsp. black pepper.
Heat 1 Tbsp. oil in a skillet over medium-high. Add chickpeas and cook, stirring often, until lightly browned, 5–8 minutes; transfer to a bowl.
Heat 2 Tbsp. oil, 1 tsp. oregano, and ½ tsp. black pepper over medium. Add shrimp and cook until pink and opaque, stirring occasionally, about 5 minutes. Transfer shrimp to bowl with chickpeas; add salad mix and bell pepper.
Whisk together remaining 3 Tbsp. oil, vinegar, scallions, zest, lemon juice, minced garlic, and remaining 1 tsp. oregano; toss with salad.
