Scallion & Bacon Spaghetti
A quick and simple pasta dish, like this Scallion & Bacon Spaghetti, is perfect on its own or as an easy side. Here, spaghetti turns smoky with crumbled bacon and grilled scallions. While a simple vinaigrette adds freshness and tang and an extra dose of flare to any meal.
A member of the allium family, scallions contain many noteworthy vitamins such as A, C, and K and a plentiful amount of B-complex vitamins and essential minerals.
Preheat grill to medium-high. Brush grill grate with oil.
Cook spaghetti in a large pot of boiling salted water according to package directions; drain. Cook bacon until crisp; transfer to a paper-towel-lined plate and reserve drippings.
Whisk together bacon drippings, vinegar, honey, and Dijon for the vinaigrette; season with salt and pepper.
Toss scallions with= oil and grill, covered, until charred and softened, 3–5 minutes. Chop scallions; toss with spaghetti, bacon, and vinaigrette.
