Pork Tacos with Pineapple

Pork and pineapple are classic pairings in tacos. Make this weeknight dinner-friendly by using quick-cooking pork tenderloin spiced with cumin, chipople, garlic, and oregano. The sweet pineapple offsets the spicy pork and adds a nice foil to the richness.

Toss pork with 2 Tbsp. oil, chipotle, garlic, oregano, cumin, and 1 tsp. salt.

Heat remaining 1 Tbsp. oil in a skillet over medium-high. Add onions and cook until softened, 45 minutes. Add pineapple and cook until heated through, 12 minutes. Stir in pineapple juice and cook 1 minute; season with salt and pepper and transfer to a bowl.

Cook pork mixture in same skillet until browned, 45 minutes.

Divide pork among tortillas; top with pineapple mixture and cilantro.
