Pork & Soba Noodle Bowls with Ginger-Peach Vinaigrette
This is the ultimate summer bowl. With grilled pork and a fresh ginger-peach vinaigrette, you can have a healthy and easy dinner on the table in less than an hour.
FOR THE VINAIGRETTE, PURÉE:
FOR THE SALAD, COOK:
For the vinaigrette, purée peaches and preserves in a mini food processor; transfer to a bowl.
Whisk in vinegar, scallions, oil, ginger, and soy sauce; season with salt and Sriracha.
Preheat grill to high. Brush grill grate with oil.
For the salad, cook noodles in a pot of boiling salted water according to package directions; drain and rinse.
Grill pork, covered, until cooked through, 2 minutes per side. Divide noodles between two bowls, then top with cabbage, snap peas, scallions, peach, and grilled pork; drizzle bowls with vinaigrette.
