Pineapple-Glazed Pork Chops with pineapple & mango relish
Pork and pineapple are a classic pairing. Brush the chops with a sweet pineapple glaze, then top them with a fresh pineapple and mango relish for a simple summer menu that's bursting with flavor.
FOR THE RELISH, COMBINE:
FOR THE GLAZE, HEAT:
Preheat grill to medium-high. Brush grill grate with oil.
For the relish, combine pineapple, mango, onion, cilantro, and jalapeño; season with salt and pepper.
For the glaze, heat pineapple juice, brown sugar, preserves, and Dijon in a saucepan over high to a boil; reduce heat and simmer until sugar dissolves and mixture thickens and is syrupy, about 5 minutes.
Grill chops, covered, 6 minutes; brush with glaze. Flip chops, glaze again, and grill until a thermometer inserted into the thickest part, but not touching bone, registers 145°, 6–8 minutes more. Transfer chops to a plate; tent with foil and let rest 3–4 minutes.
To serve, pour any meat drippings over chops, then top with pineapple & mango relish.
