Mushroom & Zucchini Soup

A mix of mushrooms gives this Mushroom & Zucchini Soup an interesting variety of different textures as well as flavors. No matter the variety you find at your grocery store, though, this soup will be speedy, simple, and great.

Melt butter in a pot over mediumhigh heat. Add onions and sauté until softened, 3 minutes.

Add mushrooms and garlic, sauté until softened and browned, 5 minutes, stirring occasionally.

Stir in broth and sage, bring to a boil, reduce heat to medium-low, and simmer soup 5 minutes. Add zucchini and simmer 5 minutes; season with salt and pepper.

Top servings with Parmesan.
