Miso Pork Bowls with Broccolini

For this recipe we used brown basmati ready-rice, but feel free to swap it out for your favorite grain.

Instructions

Whisk together miso, apple juice, soy sauce, sweet-and-sour sauce, and brown sugar for the sauce.

Toss pork with cornstarch until evenly coated. Stir-fry pork in two batches in peanut and sesame oils in a wok or saute pan over high heat until lightly browned, 3 minutes. Transfer pork to a plate using tongs.

Add ginger and garlic to wok; stir-fry until fragrant, 30 seconds. Stir in broccolini; stir-fry until stalks begin to soften, 3 minutes. Return pork to wok, stir in sauce, and cook until heated through.

Divide rice between two bowls; top with pork mixture, jicama, and peppers.
