To get a good sear on the chops, without them overcooking, use double-bone lamb chops rather than single-bone.

Instructions

Preheat grill or grill pan to medium-high. Brush grill grate with oil.

Whisk together butter and garlic.

Place tomatoes in center of a 12-inch piece of heavy-duty foil. Season tomatoes with salt and pepper, then seal foil to create a packet.

Grill chops and tomatoes, covered, flipping chops halfway through, until a thermometer inserted into the thickest part, but not touching bone, registers 130–135° for medium-rare, 1012 minutes, and tomatoes are softened,10 minutes.

Transfer chops to a cutting board, top with garlic butter, tent with foil, and let rest 5 minutes. Divide tomatoes between two plates.

Grill bread slices until toasted, 12 minutes per side, then halve on the diagonal. Serve chops over toast with tomatoes and mint.
