Lentil Soup with burrata & basil
Not to be overlooked, this Lentil Soup with Burrata & Basil is oh-so-hearty. The burrata adds a creamy element as it melts into the soup, while basil adds the perfect touch of freshness. These soups really are all that and a whole lot more.
What is Burrata?
Like mozzarella, burrata is a white orb of fresh cow’s milk cheese. But, while mozzarella is solid, burrata encases soft cheese curds and cream that perfectly melt into the soup.
Sauté carrots and onions in oil in a pot over medium-high heat until onions are translucent, about 5 minutes. Add garlic, cumin, and paprika; sauté until fragrant, about 1 minute. Add lentils and toast, stirring constantly, 1 minute.
Add broth, partially cover pot, and bring to a simmer. Simmer soup, stirring occasionally, until lentils are soft but not mushy, 25–30 minutes.
Season soup with salt, pepper, and vinegar. Divide soup among four bowls and top each bowl with a quarter of burrata and 1 Tbsp. basil.
