Sauté onions, carrot, and celery in oil in a large pot over medium-high heat until softened, 79 minutes.

Add garlic, thyme, and pepper flakes to pot; cook until fragrant, 1 minute. Add broth and bring to a boil. Stir in orzo; cook until al dente, about 7 minutes.

Off heat, stir in turkey, spinach, zest, and lemon juice; season soup with salt. Garnish each serving with feta and additional zest.
