Italian Sausage Patty Melts

What could make a patty melt better than it already is, you ask? Why, swapping out the usual ground beef burger for an Italian sausage patty, of course. Choose your favorite — hot or sweet Italian sausage for this sandwich. But don’t stop there! Make the burger big and cook plenty of onions. Nothing is better than a well-topped sandwich.

Melt 2 Tbsp. butter in a skillet over medium heat. Add onions and cook, covered, until softened, 10 minutes. Uncover skillet and continue cooking onions until they begin to brown, stirring occasionally, 10 minutes more.

Shape sausage into four ½-inch-thick patties. Melt 2 Tbsp. butter in a skillet over medium-high heat. Sauté patties until a thermometer inserted into the centers registers 160°, 810 minutes total.

Top each of 4 bread slices with 2 slices cheese, a sausage patty, and one-quarter of the onions. Top with remaining 4 bread slices.

Melt 2 Tbsp. butter on a griddle or in a cast-iron skillet over medium heat. Cook sandwiches, on one side, until bread is toasted; remove sandwiches. Melt remaining 2 Tbsp. butter on griddle, then return sandwiches, toasted side up. Cook patty melts until bread is crisp and cheese is melted, about 10 minutes total.
