Instant Pot Spicy Pineapple Chicken
This Spicy Pineapple Chicken from Lisa Childs's I Love My Instant Pot® Cooking for One Recipe Book, has fresh pineapple and bell pepper all coated in a luxurious sweet and spicy sauce — it’s every bit addictive. “Inspired by a popular Chinese restaurant chain, this deliciously sweet and spicy dish is sure to become a ‘fake-out’ (fake takeout) regular! Serve this dish over steamed white or brown rice.”
Press Sauté button on Instant Pot® and adjust to High. Add oil.
Season chicken with garlic powder, salt, black pepper, ginger, and pepper flakes in a bowl; toss to coat.
Add chicken to hot oil. Sear chicken on each side until browned, about 3 minutes. Do not stir while searing. Press Cancel button to turn off heat.
Add bell pepper, pineapple chunks, broth, soy sauce, pineapple juice, and chili sauce. Deglaze pot, scraping all the browned bits off the bottom of pot.
Close lid; turn knob to Sealing.
Press Manual or Pressure Cook button and adjust time to 3 minutes. When timer beeps, immediately turn knob from Sealing to Venting, then remove lid and press Sauté button.
Whisk together water and cornstarch in a cup. Slowly drizzle cornstarch mixture into Instant Pot® while stirring. Cook chicken mixture until thickened, about 3 minutes. Transfer Spicy Pineapple Chicken to a serving plate and serve.
