Honey Mustard Chicken & Peaches
Honey mustard and chicken are a classic pairing, but add in fresh peaches and cucumbers and you have a refreshing, light lunch or dinner.

Peeled fresh peaches are preferred, but jarred in juice or frozen, thawed are great substitutes
Preheat grill to medium-high. Brush grill grate with oil.
Combine mustard, honey, 1 Tbsp. white wine vinegar, garlic, and pepper flakes; season with salt, then reserve ⅓ cup for dressing.
Season chicken with salt and black pepper; brush with mustard mixture. Grill chicken, covered, 6 minutes per side.
Whisk oil and 1 tsp. vinegar into reserved mustard mixture. Combine peaches, cucumbers, and shallots on a platter. Top with basil and chicken; drizzle with dressing.
