— aka Yankee beans — require lengthy, slow cooking if using dried beans, but canned beans make a convenient shortcut.

Instructions

Cook bacon in a pot until crisp; transfer to a paper-towel-lined plate. Drain all but 3 Tbsp. drippings from pot. Add onions, carrot, celery, and garlic; cook over medium heat, stirring often, 5 minutes.

Stir in broth, potatoes, and thyme sprigs; bring to a simmer and cook until potatoes are fork-tender, about 15 minutes, stirring often.

Stir in beans and ham; season soup with salt, pepper, and chopped thyme. Top servings with bacon.
