The presentation of a whole grilled fish is incredibly dramatic, but the process of making it doesn’t have to be. This trout — flavored with lemon, mint, and oregano — takes just 30 minutes!

Unless you prefer otherwise, leave the tasks of cleaning and preparing the fish to the fishmonger, and simply purchase trout that are ready to use.

Instructions

Preheat grill to medium-high. Brush grill grate with oil.

Season the inside of each trout with salt and pepper, then arrange 1 mint sprig, 1 oregano sprig, and 3 lemon slices inside each one. Fold trout closed and tie with kitchen string. Gently rub the outside of trout with oil; season with salt and pepper.

Grill trout, covered, 3 minutes per side. Remove string before eating
