Grilled Pork Tenderloin with Scallion-Cilantro Sauce
Pork tenderloin is one of those easy-to-work-with proteins that cooks in a snap, goes great with lots of flavors, and is very tender. All it needs is a little time on the grill and a super-fresh zesty sauce made with scallions, cilantro, and jalapeños.
FOR THE SAUCE, PURÉE:
FOR THE PORK, GRILL:
Preheat grill to medium-high. Brush grill grate with oil.
For the sauce, purée scallions, cilantro, jalapeño, lime juice, and oil in a food processor; season with salt.
For the pork, grill tenderloin on all sides until a thermometer inserted into the thickest part registers 145°, 10–12 minutes. Transfer tenderloin to a plate, tent with foil, and let rest 5–10 minutes. Serve tenderloin with sauce and top with Cotija.
