Test Kitchen Tip
No need to run to the store to buy salted butter if you don’t already have it on hand. Simply use unsalted butter and top with a little salt.
Spread butter on one side of each bread slice; place on a cutting board, buttered sides down.
Whisk together Dijon, honey, and mayonnaise in a bowl; spread on unbuttered sides of bread.
Divide half the Cheddar among four of the slices, followed by ham, apple, shallot, and remaining half of Cheddar; top with remaining bread slices, buttered sides up.
Cook sandwiches, two at a time, in a 12-inch nonstick skillet over medium-high heat, 2 minutes.
Flip sandwiches and press with a spatula. Cover skillet (wipe condensation from lid with a towel, if necessary) and cook sandwiches until undersides are golden and cheese melts, 2–3 minutes. Flip sandwiches again; press with a spatula, cover, and cook 1 minute more. Transfer sandwiches to a cutting board; let rest 1–2 minutes before cutting in half. Repeat cooking procedure with remaining two sandwiches.
