Instructions

Preheat grill to medium-high. Brush grill grate with oil.

Cook rice according to package directions; divide among four bowls.

Divide green beans, mint, cabbage, cucumbers, tomatoes, radishes, and carrot among bowls.

Toss shrimp with lime juice; season with salt and pepper. Thread shrimp onto four skewers and grill until cooked through, 2 minutes per side. Divide shrimp among bowls and serve with dressing.
