Cook noodles in a pot of boiling salted water according to package directions; drain.

Melt butter in a sauté pan over medium heat. Add thyme and garlic; cook until fragrant, 1 minute. Stir in flour and cook 1–2 minutes.

Whisk in broth, half-and-half, and wine until smooth. Simmer sauce until it coats the back of a spoon and leaves a trail that does not fill in, about 10 minutes. Add lemon juice to sauce; season with salt and pepper.

Stir in turkey, vegetables, and noodles until heated through.
