Creamy Ranch Chicken Noodle Casserole
Looking for a new twist to the old stand-by chicken noodle casserole? We’ve added a ranch dressing packet to the mix, and it’s simply irresistible and oh so comforting!
FOR THE CASSEROLE, BLANCH:
FOR THE TOPPING, COMBINE:
Preheat oven to 350°. Coat a 9×13-inch baking dish with nonstick spray.
For the casserole, blanch noodles in a pot of boiling salted water, 1 minute; drain, rinse with cold water, and drain again.
Melt butter in same pot over medium. Add onions, carrots, and celery; sweat, covered, until vegetables soften, 5 minutes.
Add flour and ranch seasoning; cook 2 minutes. Stir in broth, half-and-half, and cream cheese; bring to a boil, reduce heat, and simmer until thick, 2–3 minutes.
Stir in noodles, chicken, Cheddar, and parsley; season with salt and pepper. Transfer noodle mixture to prepared dish.
For the topping, combine crackers, Parmesan, butter, and parsley; season with salt and pepper. Sprinkle topping over casserole and bake until bubbly, 25–30 minutes. Let casserole rest 5–10 minutes before serving.
