When buying avocados, choose ones that yield to gentle palm pressure but that aren’t too soft. If you get an avocado that’s still rock-hard, ripen it in a paper bag at room temperature, then eat, or chill for up to a week.

Instructions

For the dressing, whisk together lemon juice, 3 Tbsp. oil, garlic, mayonnaise, and zest until combined; season with salt and pepper.

For the salad, sauté corn in 1 Tbsp. oil in a skillet over high heat until hot, 45 minutes; transfer to a bowl with avocado. Toss salad with chives and dressing; season with salt and pepper.
