Citrus Scallops with Grilled Grapefruit

Grapefruit isn’t just for breakfast! Grill it along with succulent scallops to give supper a fresh twist.

You can’t help but feel special when scallops are on the menu. Here, they’re grilled to perfection and drizzled with a hot honey and grapefruit sauce. But this touch of citrus is nothing compared to the slices of grapefruit — also done on the grill! The heat caramelizes the fruit’s natural sugars for exceptional fl avor. Just be sure to slice the grapefruit thick, so it holds up on the grill.

Scallops can be lumped into two groups — bay and sea. Use sea scallops when grilling. They’re much larger and won’t fall through the grill grate.

Instructions

Preheat grill to medium-high. Brush grill grate with oil.

Heat grapefruit juice and honey in a small saucepan until it boils; reduce heat to medium and simmer until reduced to ⅓ cup. Season sauce with salt and pepper.

Season scallops with salt and pepper. Lightly coat scallops and grapefruit slices with nonstick spray.

Grill scallops until cooked through, 23 minutes per side. Grill grapefruit slices, turning frequently, until grill marks appear, 12 minutes per side.

To serve, place grilled grapefruit on serving plates and top with scallops. Drizzle scallops with sauce.

Remove the “foot” from the scallops before cooking. Although it’s edible, it gets very chewy once cooked.

Easily remove the grapefruit peel by cutting off the ends for stability, then slicing off the peel.

To prevent sticking, coat the slices of grapefruit with nonstick spray before placing on the grill.
