Add remaining 1 Tbsp. oil to skillet; add sausages and cook until lightly browned, 46 minutes.

Stir potatoes, onion, sprouts, apple, and garlic into skillet; cook, stirring frequently, until vegetables soften, 34 minutes.

Whisk together vinegar, thyme, and mustard; stir into skillet. Season hash with salt and pepper.
