Chicken Parmesan Soup
If chicken parmesan is a favorite dish in your home, you're bound to love this Chicken Parmesan Soup. With all the familiar flavors of the traditional pasta dish, it satisfies everyone in the family. Plus, it comes together in just 25 minutes — a great candidate for a new go-to meal.
If you have leftovers, you may need to add more broth to the soup as the pasta will absorb a lot of it.
Heat 2 Tbsp. oil in a pot over medium. Add onions, partially cover, and sweat until softened, stirring occasionally, 10 minutes. Stir in garlic and tomato paste; cook until fragrant, 2 minutes.
Stir in broth and tomatoes, increase heat to medium-high, and bring to a boil. Add penne, reduce heat to a simmer, and cook according to package directions. Off heat, stir in chicken, Parmigiano-Reggiano, and basil; season soup with salt, black pepper, and pepper flakes.
Heat remaining 2 Tbsp. oil in a nonstick skillet over medium-high. Add bread crumbs and cook until toasted, 2–3 minutes. Top servings with bread crumbs.
