If you have leftovers, you may need to add more broth to the soup as the pasta will absorb a lot of it.

Instructions

Heat 2 Tbsp. oil in a pot over medium. Add onions, partially cover, and sweat until softened, stirring occasionally, 10 minutes. Stir in garlic and tomato paste; cook until fragrant, 2 minutes.

Stir in broth and tomatoes, increase heat to medium-high, and bring to a boil. Add penne, reduce heat to a simmer, and cook according to package directions. Off heat, stir in chicken, Parmigiano-Reggiano, and basil; season soup with salt, black pepper, and pepper flakes.

Heat remaining 2 Tbsp. oil in a nonstick skillet over medium-high. Add bread crumbs and cook until toasted, 23 minutes. Top servings with bread crumbs.
