Chicken-Cheddar Panini with Artichokes & Apples
This super-easy panini sandwich recipe only has six ingredients but offers loads of flavor from garlic focaccia, marinated artichoke hearts, sharp cheddar, and apple.
Test Kitchen Tip
Using an airy type of bread ensures the sandwich won’t be too bread heavy.
Halve foccacia horizontally.
Brush cut sides of bread with reserved artichoke marinade.
Layer ¾ cup Cheddar on bottom half of bread (cut side up); top with chicken, artichokes, peppers, apple slices, remaining 3/4 cup Cheddar, and top half of focaccia (cut side down).
Preheat a cast-iron grill pan over medium.
Place panini on grill pan; set a cast-iron skillet on top and grill 3 minutes. Remove skillet, turn panini 45-degrees to cross-hatch sandwich; replace skillet and grill panini until cheese starts to melt, about 3 minutes more. Carefully flip sandwich, repeat cross-hatch procedure on other side.
Transfer panini to a cutting board; let rest 3 minutes before cutting into quarters.
To help crisp the panini, weigh it down with a cast-iron skillet. Add a sheet of parchment between the bread and the skillet if the bottom of your skillet isn’t pristine.
